The role of lactic acid bacteria polysaccharide in structure formation of acidified milk gels
Research area and project description:
We are looking for a motivated MSc level researcher with interest in study of microstructure and rheology of dairy-like matrices.

This project will focus on new protein mixes, understanding the functional properties of novel proteins, plant based or deriving from other sources, and their interactions with more established animal proteins.
You will be applying some of the most advanced chemical physical techniques to understand the effect of processing on protein- protein, protein-polysaccharides, and protein-lipid interactions, but using relevant pilot scale equipment to process your matrices.
Spectroscopic and spectrometric techniques, analytical techniques as well as rheology and microscopy will be your everyday tools.
As a PhD candidate your task will be to drive your research project, critically review the relevant scientific literature, propose, set up and run experiments, interpret, and report the data, and communicate your findings in scientific papers and/or conferences. You will regularly provide project updates to your supervisors and other stakeholders.
As this is an industrial PhD project, you will take part in the activities the Danish Innovation Fund requires from their grantees, such as mid-term project review, project kick-off meeting, Fund’s Industrial PhD course, and similar.

Qualifications and specific competences:
We are looking for food scientist/engineer with a MSc degree in a relevant field looking to develop their knowledge of fermentation of dairy matrices, their microstructure, and macroscopic physical properties in an industrially relevant context. Training or interest in data science and machine learning is a strong advantage.
Further, you have as many as possible of the following competences:
- Food/dairy fermentations and lactic acid bacteria
- Dairy chemistry
- Soft matter physics/rheology
- Spectroscopic, diffraction, and microscopic analytical methods
- Statistics and data treatment tools
A good candidate is an outgoing team player, fluent in English, is highly curious, tenacious, problem solving oriented, seeks the big picture, has good communication skills, and is dedicated to delivering on time.

The place of employment is Chr. Hansen, and the place of work is Chr. Hansen, Bøge Alle 10, 2970 Hørsholm, Denmark, and Agro Food Park 48, 8200 Aarhus N, Denmark.
Since it is an Industrial PhD project, the Industrial PhD candidate will be employed in the company and enrolled at Graduate School of Technical Sciences (Aarhus). The Industrial PhD candidate is expected to split the time equally between the company and the university, i.e., work equally in both places – the actual scheduling will be decided within the framework of the project.
